Garlic Scape Pesto

if too strong for your liking, add more of the other ingredients (can substitute an herb such as cilantro, basil, or dill for part of the scapes) until you find the right balance.  proportions below are pretty rough to encourage tasting during the process!

10 - 20 scapes, coarsely chopped, seed tops and any woody bottoms removed

1/3 - 1/2 cup Parmesan, grated

1/4 -1/2 cup walnuts, almonds, or pine nuts; can be lightly toasted for richer flavor

1/2 cup olive oil

salt and pepper to taste

squeeze or two of lemon juice


Place scapes, cheese, and nuts in food processor.  With motor running, pour in olive oil.  Add salt, pepper, and lemon juice, sampling as you go to get it just right.  Blend until creamy.  For a thinner consistency, add more oil.

*one tip for pasta dishes: reserve some of the cooking water and add in at the end to avoid sticky/gummy noodles.  throw in some cherry tomatoes for a real treat.
